I’m not a morning person, so if there is anything I can do the night before to set myself up for success the following morning – that’s a major win. Since I also work for a company that requires me to work in buildings other than my home, they have to be healthy and mobile. This checks both boxes for me, and keeps me completely full and satisfied until lunch.
Plus, let’s face it… anything you can put in a mason jar is automatically ten times more appealing, right?
What You Will Need:
- 1 and 1/2 cups fresh strawberries (washed & halved)
- 2 tsp chia seeds
- 2 and 1/4 cups old fashioned rolled oats (preferably gluten free)
- 2 tablespoons chia seeds
- 2 and 1/4 cup unsweetened vanilla almond milk
- 1/2 cup plain Greek yogurt
- 1/4 to 1/2 cup all natural almond butter
- 1 and 1/2 tsps pure vanilla extract
- 1 packet of monkfruit sweetener (or sweetener of choice, add more if you need to)
The How-To:
- In a small bowl add your washed and cut fresh strawberries and the 2 tsps of Chia Seeds. Stick them in the microwave for a minute/minute and a half depending on your microwave. The goal here is to get them soft enough to smash up.
- In a separate bowl dump your oats, almond milk, 2 tbsps of chia seeds, greek yogurt, almond butter, vanilla extract, and sweetener… mix them up GOOD!
- Once they are mixed well, take half of your mix and evenly divide it between your 4 containers. Then take your microwaved mix and evenly divide that between the 4 containers. Take the other half of your oat mixture and divide evenly between the 4 containers to layer… cap it and pop it in the refrigerator!
One run through will make you 4 servings, and sometimes if I’m lazy and eyeball things I get a fifth as well. They are called overnight oats because you want to make them the night before you would like to start consuming them so the oats have time to soak up the almond milk and soften.
I especially like to top them with some extra fresh strawberries and a few almonds, but you can throw whatever you’d like on top or just eat them as is.
I also recommend investing in some different sized mason jars. For 1 they are dishwasher safe (which is a HUGE time saver), and they make storing things in your refrigerator a lot easier since they tend to take up less space and stack. You can also get them relatively cheap at Walmart or the Grocery Store.
In full disclosure I found a very similar recipe for over night oats that uses peanut butter and less of each ingredient on Pinterest. I regret to inform you that I no longer can find the post so I do not know who to give credit to… but if you know then drop it in the comments below! Because this recipe really saved my morning routine at work, and even though I do it a bit differently I can’t be given credit for it. Someone much smarter and much better came up with a version of it I adapted to my own – and I am all about passing along something that I love!
